How to make Lahmajun

Lahmajun (translated as "meat with dough") is a thin Turkish pizza with minced meat, vegetables and greens.





In the old days, poor peasants made such cakes from leftover food. Today, this dish has become a popular street fast food in Turkey, Armenia and many Arab countries.





Jokingly or seriously, the Turks believe that the Italians copied their pizza from Lahmajun. In comparison, Turkish pizza is thinner, it is baked with a layer of minced meat, and then added vegetable filling and rolled.

Recipe for thin pizza Ingredients for filling
  • 200g ground beef
  • 100g mutton mince
  • 1 bulb
  • 2 sweet peppers
  • 1 hot pepper
  • 1 tomato
  • 1 bundle of green onions
  • 1 clove of garlic
  • 1 tbsp tomato paste
  • 2 tbsp olive oil
  • parsley
  • salt and black pepper to taste


Test ingredients
  • 280g flour
  • 5g dry yeast
  • 1 tbsp sugar
  • 1 tsp salt
  • 3 tbsp olive oil
  • 130 ml of water


Ingredients for tzatsiki sauce
  • 500ml neutral yogurt
  • garlic
  • 1 cucumber
  • dillbundle


Preparation
  1. Grate the garlic, cut the greens finely, grind all the vegetables in the food processor.
  2. Mix in a bowl of ground beef and lamb, vegetables, greens, garlic, tomato paste, butter and spices.


  3. Pour the flour into a deep bowl, make a hole in the middle, add yeast and sugar to it.
  4. Pour some of the total amount of warm water and mix slightly. Leave it for 10-15 minutes.
  5. Pour the olive oil, the remaining water, add salt, within 10 minutes of mixing an elastic soft dough.
  6. Cover the bowl with a napkin and leave it warm for 1.5 hours. The test should increase in volume by approximately three times.
  7. Divide the dough into 8 equal parts.


  8. Roll each part into a thin flatbread 1-2 mm thick.
  9. Send the cake to the buttered bowl. Put 2 tablespoons of filling on it.


  10. Evenly distribute the filling on the surface of the cake.


  11. Bake pizza in the oven heated to 230 degrees 7-10 minutes. Repeat the same procedure with all the cakes.
  12. All that remains is to fill up Lahmajun. Before that, lubricate the surface of the tortilla with tsatsiki sauce from unsweetened yogurt, greens, crushed cucumber and garlic.


  13. Then put on top of the minced vegetables and your favorite greens.
  14. Roll the cake with a roll. If the roll is too long, cut it in two.


  15. Lahmajun in Turkish ready. Bon appetit!
