Strawberries for Winter Ingredients
- 1kg strawberries
- 1 kg of sugar
- 200g of water
- 2g citric acid
Preparation
- Take a good cossack, put sugar in it, then water. Put the Cossacks on a medium fire and wait until the sugar melts and turns into syrup. Let it boil for a maximum of 15 minutes on a minimum heat and add citric acid.
- After that, let the syrup boil for another 15 minutes until it turns into a viscous mass, similar to liquid honey.
- Prepare strawberries: wash the berries and cut off the peduncles. Large berries can be cut in half and small ones left.
- Pour strawberries with syrup and leave it like that for 20 minutes. During this time, strawberries will “cook” a little and let the juice go. After that, gently strain the strawberry juice with syrup into the same cossack in which you melted the sugar. The resulting thick caramel also send to the Cossacks.
- Boil the syrup for no more than 10 minutes. The caramel will dissolve and the syrup will become liquid. Let the resulting foam settle and put the syrup in the strawberries again for 20 minutes.
- Meanwhile, sterilize the jars: pour 50 g of water into each and send it to the microwave for 10 minutes. Covers just boil for 5 minutes at least. Wipe everything with a clean towel.
- After 20 minutes, again pour the syrup through the couch in the same cauldron. Boil it for no longer than 5 minutes and quickly remove the foam until it cools. Carefully spread the strawberries in jars, half the volume will suffice. Pour strawberry syrup and close the jars. Now you can put the cans in the closet, ready!
