English Christmas cake ingredients
- 100g butter
- 2 eggs
- 250g flour
- 150g sugar
- 8g vanilla sugar
- 1 lemon
- 2 tsp baking powder
- 125 ml of cream (33% fat)
- 150g light raisins
- 150g dark raisins
- 50g cherry
- 50g candied
- pinch
Preparation
- Blow the soft butter with a mixer to lushness. It takes about 3-5 minutes. Continuing to whip, add sugar, vanilla sugar, a pinch of salt and 1 lemon peel to the oil.
- In a separate container, beat the eggs with a fork, and then pour them into the oil mass, continuing to beat with a mixer. Mix flour with baking powder, and then portionly add the dry mixture to the liquid mass. Pour the cream and stir it with a silicone spatula. If desired, cream can be replaced with sour cream.
- Dry fruits thoroughly washed with warm water and dry well. Add dried fruit and candied fruit to the dough. Move the dough into a mold covered with parchment paper.
- Bake the cupcake in a preheated to 180 degrees oven for an hour. Check your readiness with a toothpick.
