English Christmas cake ingredients
  • 100g butter
  • 2 eggs
  • 250g flour
  • 150g sugar
  • 8g vanilla sugar
  • 1 lemon
  • 2 tsp baking powder
  • 125 ml of cream (33% fat)
  • 150g light raisins
  • 150g dark raisins
  • 50g cherry
  • 50g candied
  • pinch

Preparation
  1. Blow the soft butter with a mixer to lushness. It takes about 3-5 minutes. Continuing to whip, add sugar, vanilla sugar, a pinch of salt and 1 lemon peel to the oil.

  2. In a separate container, beat the eggs with a fork, and then pour them into the oil mass, continuing to beat with a mixer. Mix flour with baking powder, and then portionly add the dry mixture to the liquid mass. Pour the cream and stir it with a silicone spatula. If desired, cream can be replaced with sour cream.

  3. Dry fruits thoroughly washed with warm water and dry well. Add dried fruit and candied fruit to the dough. Move the dough into a mold covered with parchment paper.

  4. Bake the cupcake in a preheated to 180 degrees oven for an hour. Check your readiness with a toothpick.

  5. That's it, Christmas cake ready. It is better to cut it the next day. Before serving, sprinkle the muffin with powdered sugar. Bon appetit!

It doubled the amount of fruit. It was magical! One left to ripen, the other was eaten immediately.

Crunchy on the outside, and soft creamy, and moderately moist on the inside, this English Christmas cupcake will be a great addition to the... teahouse Both on holidays and on weekdays!
