An elegant version of a grated cake from childhood with sour cream instead of jam

Many are familiar with the classic grated cake, which uses berries or jam. We decided to make this dessert softer and more airy. Therefore, we offer a recipe for sour cream cake.





The delicate filling, resembling the taste of the souffle "Bird's milk", is perfectly combined in it with crumbly crumb from sand dough. And the sweet aroma of lemon peel just does not allow you to pass by.

Cake recipe on sour cream ingredients
  • 180-200g flour
  • 2 yolks
  • 75g butter
  • 70g sugar
  • lemon peel
  • 0.5 tsp baking powder
  • baking-piece


Filling ingredients
  • 380g sour cream 20% fat
  • 70g sugar
  • 2 egg whites
  • 2 tbsp flour


Preparation
  1. Separate the proteins from the yolks. If the eggs are very small, you can take 3 pieces.


  2. Add the sugar, stir well with a wreath or a mixer.


  3. Melt the butter and pour it into the mixture. Stir again.


  4. Carefully, so as not to touch the bitter white layer, rub lemon peel into a bowl.


  5. Add flour and baking powder, mix the dough. It is better to add flour gradually. If the dough is liquid, you can sprinkle flour. But if it comes out too dry, it will be much harder to fix the situation.


  6. Make two balls of the same size from the dough. Wrap one of them in food wrap and send them to the freezer for 30 minutes.


  7. In the meantime, prepare the stuffing. Beat the squirrels until solid peaks form. It is believed that eggs with brown shells are better whipped and ideal for baking. There is no difference between white and brown eggs. Fresh and homely ones are better.

  8. Pour to whipped sour cream squirrels, whip for another 1 minute. Then sprinkle the sugar and flour, mix it again.
  9. Lubricate the baking mold with butter and sprinkle with flour.
  10. Distribute the part of the dough that didn't get into the freezer along the bottom of the mold.


  11. Put the stuffing on her.
  12. On top of it, grind a ball of dough from the freezer.


  13. Send the form to the oven, preheated to 180 degrees, for 35-40 minutes.
  14. The finished grated cake should be completely cooled, and then sprinkled with powdered sugar so that it becomes more festive.
