Aromatic soup of zucchini in Italian

This soup is very peculiar, with a strong taste of Basil. If you love it — our recipe for you.

Ingredients:

  • 700 g fresh zucchini
  • 1 liter of vegetable broth
  • 1 medium bunch Basil




  • 30 g butter
  • 50 g grated Parmesan cheese
  • 4 slices of homemade bread
  • freshly ground black pepper
  • salt
 

You will also need:

  • pan
  • blender
 

Preparation:

1. Fry the bread slices on the grill on both sides until Golden brown.

2. Zucchini wash and cut into large slices. Fold the zucchini in a separate pan, pour in the broth and simmer for 15 minutes. Then add Basil leaves, butter and grated Parmesan cheese. Remove the pan from the heat.

3. Blend soup into a smooth mixture using a blender. Pepper and salt if necessary.





4. Put in a separate plate slice of bread and pour on top of hot soup. Serve.
