Vegetable chickpea soup with leek from Jamie Oliver

Chickpea soup with leek protein-Rich garbanzo beans (chickpeas) well compensates for the lack of proteins in the body during fasting. To prepare this soup is a snap, try it, you'll definitely like it!





Ingredients:
  • 350 gr. dry chickpeas

  • 500 ml. vegetable broth or water in which boiled chickpeas

  • 1 PC. potato

  • 2 cloves of garlic

  • 3 stems onion leeks

  • olive oil

  • salt, pepper.

Method of preparation:1. Soak the chickpeas overnight in water. In the morning drain the water, rinse it in running water.

2. In a saucepan, pour water, add the chickpeas and cook the chickpeas along with potatoes 30-40 minutes until tender.

3. Heat the olive oil in a frying pan, add a couple of cloves of garlic. Slice leeks and add to the pan. Fry until Golden brown for 5-7 minutes.

4. Stir fried in the pan with the chickpeas and simmer for 10-15 minutes.

5. Half chickpea and leek mix along with the vegetable stock or water in which the cooked peas, blend until smooth, homogeneous mass — this will be the base of the soup. At this stage you can salt and pepper the broth.
