The office dinner— chicken breast with vegetable sauce





Food to take to the office, must comply with certain reasonable requirements. For a start, it should be fairly hearty, but not overly because we still have a few hours of work. Flavorful, but not too much. For example, salsa with lots of garlic to take to work still inhumane.

Chicken with fragrant and colorful sofrito Caribbean vegetable sauce – completely meets all requirements. The only thing to add is a few slices of crispy baguette or crumbly reasonable portion of rice.

Chicken breast with Caribbean vegetable sofrito sauce

Cooking time: 45 minutes

What you need:

2 chicken Breasts without bone and skin

3 sweet peppers of different colors (red, yellow, green)

2 tomatoes

50 g butter

50 ml dry white wine

3 cloves of garlic

1 Burgundy onion

1 bunch fresh cilantro

1 chili pepper

1 pinch dried oregano

1/2 tsp paprika

5-6 tbsp olive oil

1 tsp sugar

: coarse-ground black pepper

salt to taste

What to do:

1. Heat in a frying pan 1 tbsp olive oil, sprinkle with lemon juice. Add the butter and put the chicken Breasts. Add salt, season with pinch of oregano. Fry 3 minutes on high heat, flip to the other side. Fry 2 minutes, then reduce the heat to medium, cover and cook for another 3 minutes. Remove the chicken from the pan, cool slightly and cut diagonally into slices thickness 2 see

2. Cut the pepper in half lengthwise, remove seeds and partitions, cut into half cubes roughly 1.5 cm chili Pepper free from seeds and cut into thin circles. With tomato remove the peel, flesh cut into the same cubes. Onion and garlic finely chopped.
