Salad Nicoise — a lightweight version of the classic Provencal salad
Lightweight version of the classic Provencal salad with green beans, tuna and other ingredients, but without the potatoes. Nutritious and tasty salad suitable as a standalone course.
Ingredients:
Boil beans for several minutes until it becomes slightly soft, drain in a colander and immediately put ice under the water so it will retain its bright green color. Eggs boil, peel and cut in half. The cherry tomatoes cut in half. For the filling mix the vinegar, mustard and oil. Put in a bowl the beans, olives, tuna and tomatoes, pour dressing, salt and pepper, stir. Arrange on a plate, then put the egg and parsley. The recipe makes 2 servings.
