Parfait with fresh berries and sweet cream cheese

Parfait (or trifle) – my secret dessert on those occasions when you need to cook dessert for a large number of people, to spend a minimum of time, but at the same time impress with taste and presentation.

Parfait is a layered dessert. Its membership usually includes cream or pudding, fruit, and sometimes even a biscuit or shortbread dough. The parfait lots of variations – experiment with fillings, experiment with fruits, look for one that suits you. Today I offer you a basic recipe for parfait with summer berries and cream cheese. Berries for a parfait, you can use any, but because of the sugar in the dessert at least, choose those that are sweeter and more aromatic. Combination of raspberry-strawberry-blueberry, I liked the strawberry parfait, but is also well suited to a sweet peach or nectarine.

INGREDIENTS /8 servings/

  • 500 grams of strawberries (or other sweet fruits or berries), cut into cubes of size 1 cm
  • 1 Cup (250 ml) milk
  • 5 tablespoons sugar
  • 4 egg yolks
  • 2½ tablespoons corn starch
  • 1 pack (175 grams) cream cheese, room temperature
  • 1 teaspoon of vanilla extract or a sachet of vanilla sugar
  • 1 Cup (235 grams) heavy cream
METHOD OF PREPARATION:

  • Step 1. Bring 200 ml (¾ Cup) milk and 3 tablespoons sugar to a boil in a small saucepan over medium heat.
  • Step 2. Mix well whisk the egg yolks, the remaining milk, 2 tablespoons sugar, starch and vanilla. Pour a thin stream of hot milk into the egg mixture while stirring continuously.
  • Step 3. Return the entire mixture on the fire. Stirring constantly with a whisk, cook over low heat until the mixture thickens, about 1-2 minutes. Remove the pan from the fire. Add in cream the cream cheese and stir until smooth. Cool the cream to room temperature.
  • Step 4. Whip the cream with a mixer in thick foam. Carefully, with a spatula, put the cream in the cream and stir, so the cream does not leave white streaks.
  • Step 5. Assemble the dessert by alternating layers of cream and fruit. The last layer of fruit. Put the dessert in the fridge for at least 2 hours and up to 24 hours.published
