Marinated eggplant with oregano

Did you know that eggplant from the point of view of biology berry, although we used to think about him as a vegetable? The eggplant is another name, quite a common — blue. Indeed, the most common fruit with purple almost black color. But there are white eggplants, and yellow, and striped.

Ingredients:

  • 900g aubergines, cut into rings
  • salt
  • 1.5 cups white vinegar
  • 1 Cup water
  • dry oregano, to taste
  • 4-6 chopped cloves of garlic
  • olive oil




Recipe:

Place the aubergine rings in a colander, sprinkle with salt. Allow to stand for 2-3 hours, every 30 minutes shake to filtered bitter juice.

Bring to boil vinegar and water in a large pan. In a pan put the eggplant for 3 minutes.

Fold the eggplant in a large glass jar, pour oregano and garlic between the layers. Pour olive oil.

Roll up the lid, leave to stand for 1 week.published
