Jam without sugar is not nanotehnologija idea. It is rather well-forgotten old recipes.
Jam without sugar
This recipe is suitable for virtually any berries: honeysuckle, currant, raspberry, blueberry, gooseberry, BlackBerry, amelanchier, Aronia, strawberries. However, the berries definitely lose "appearance", but the taste is perfect.
Pure dried berries to use in sterile jars. Banks periodically agitate the berries that went tighter. Put banks (several) to be sterilized in boiling water. As soon as berry gives juice and sits, pours from one jar to the other for another serving of berries. And so as long as the banks are not filled. Full cans to cover the lids and cook for about 20-40 minutes depending on the amount of banks. Then roll up, turn over and let cool.
For this recipe you can cook and drain, pre-cut it in half and remove the seeds. Enough filled jars to sterilize in boiling water for 20 minutes.
Stored under normal conditions. Sugar is optionally added directly by drinking.
Compotes without sugar
Acidic fruits and berries (currants, cherries, gooseberries, sour apples) decompose in jars and fill with boiling water. Stand 10 minutes, drain water, bring again to a boil and pour again. Again, stand 10 minutes and repeat the procedure a third time. Then sterilize them by banks in the normal way.
If preparing the juice of sour fruits (pears, peaches, apricots), add to each jar on the tip of a teaspoon of citric acid. The seeds from the fruits must be removed!
Pears, sweet apples cut into quarters and about 10 minutes proverjaem in boiling water with citric acid (1/4 teaspoon per 1 liter of water). Cooked fruit put in clean, dry jars and pour the water they were boiled in, again brought to the boil.
Filled cans cover lids and sterilize them in boiling water for 30-40 minutes (liter Bank – 30 minutes). Sterilized banks, roll up, wrap it up upside down and so cool.
Fruit puree without sugar
For mashing good use of the apples, currants, pear, quince, plum, gooseberry, blackthorn. You can use unripe, or, conversely, overripe fruit, fruit drops.
Large fruit cut into slices, remove the bones (or seeds). Simmer in small amount of water (200 ml per 1 kg of fruit) for 10-15 minutes (until tender). Apples can be baked in the oven. Hot prepared fruit wipe through a sieve or colander and proverjaem another 2-3 minutes, stirring constantly. Then spread into clean dry jars and sterilize for 20-30 minutes, then roll, turn it over and upside down cool.
As a natural preservative can be added in fruit compotes and jams without sugar, and various medicinal and aromatic herbs, juice, other berries, fruit and even vegetables (e.g., beetroot, wood sorrel, honeysuckle). For preservation of unsweetened fruits prone to Browning, you can apply ascorbic acid. It not only slows down oxidation processes, but also improves the taste and vitamin value of blanks.
Freezing berries
Almost all berries (cherry, raspberry, cranberry, strawberries, honeysuckle, cranberries, currants) can very successfully be frozen with no added sugar.
This washed berries purified from the peduncle, dry, spread on a plastic tray (or foil) so that the berries do not touch each other, and for 2 hours placed in a freezer. After that the berries are poured into bags and freeze completely.
Frozen this dry process the berries are in the package individually and not sticky lump. They are very easy to pour the required amount to defrost. Remember that defrosted berries such can be only once. With repeated thawing and they lose their appearance, and all the valuable nutritional properties. Defrost is the workpiece slowly, just letting the night in the fridge. If you prepare berry juice or broth, just omit the frozen berries in the boiling water.
Of course, any method of processing robs fruit and berries a certain amount of their valuable properties. But the cold in the winter and what is left turns out to be very important and truly festive "memories of summer".
