5 delicious vegetarian recipes for cutlets

Ingredients
  • 100 g buckwheat groats
  • 250 g paneer or Adyghe cheese

 Potato Patties with Peas and Greens

Ingredients
  • 2 cups of spinach leaves
  • 2-3 large potatoes (boil and mash into a puree)
  • 1 Cup green peas
  • a handful of cilantro leaves or parsley
  • vegetable oil
  • 1/2 h boxes. finely chopped ginger
  • salt, asafoetida, h pepper, coriander, cumin
  • 3-4 table. lies. semolina/flour/breadcrumbs
  • 1 table. lies. corn or potato starch
 

 

How to cook?In skillet, heat 1-1,5 table. lies. oil. Add ginger and spices. Lightly fry. Then add the spinach leaves and peas. Simmer for 2-3 minutes. You can add 1-2 table. lies. water. Cook until the moisture evaporates. Then set aside and cool. Grind the peas and spinach in a blender, adding the cilantro leaves/parsley. The resulting mass is to add to mashed potatoes along with a starch and semolina. Add salt and stir. Form small patties and fry them in butter until Golden brown.



 Millet Patties Ingredients
  • 1 Cup millet
  • 500 ml of water or vegetable broth
  • 1/3 Cup sour cream
  • 1-2 carrots (grate)
  • 2 table. lies. finely chopped olives
  • 1 h lodges. chopped sage
  • 1 h lodges. chopped rosemary
  • 1/2 h boxes. salt
  • 1 table. lies. olive oil
  • asafetida, h pepper and other spices to taste

How to cook?

Fry in oil millet. Pour the boiling broth/water, bring to a boil. Cover and cook on low heat for about 20 minutes. Then let it cool down. Add remaining ingredients and mix well. Roll in flour or semolina. Fry in oil until Golden brown.



 Cutlets of Eggplant

Ingredients
  • 2 large eggplant
  • 2 table. lies. olive oil
  • 100 g grated cheese (without rennet)
  • 2 table. lies. chopped parsley
  • 1 h lodges. salt
  • asafoetida, h pepper, cumin, coriander
  • 100 g semolina/ground almonds/breadcrumbs
 

 

How to cook?

Cut eggplant into small cubes and fry in butter with salt and spices. Then cool and grind in a blender. Add grated cheese (paneer better/Adyghe), semolina/bread crumbs/almonds and greens. Mix well and form small patties. Leave them in the fridge for 20-30 minutes. Then fry until Golden brown (or bake in the oven).
