Salad of roasted beets

This salad shows that the potential of such a simple vegetable, like beets, many of us underestimate.

Any salad with beets is often overloaded with meanings, adding nuts, prunes, raisins, other fruits and ingredients that push the beets into the background – but if you let her solo, bringing the role of all supplements only to complement and enhance the taste of beets, you get another absolutely complete dish.

2 hours + 5 minutes Ingredients 2 portions 2-3 medium beets 1/2 red onion a few sprigs of tarragon, Basil and of chives 1 tbsp vegetable oil for the filling: 2 tbsp olive oil 1 tbsp wine vinegar 2 tbsp orange juice salt black pepper Washed beets, place on sheet of foil, sprinkle with water, a small amount of vegetable oil, season with salt and black pepper and seal the foil sheet to make a sort of package.

Put the package in the oven, preheated to 190 degrees and bake for an hour and a half until the beets are soft. Remove the package, unfold (look out for hot steam!) and set aside to cool. When roasted beetroot can be taken in hand, clean it from the peel, cut each into quarters, and cut into slices with a thickness of about a centimeter. Place it into a bowl, mix the seasoning ingredients, pour it on the beets, stir and leave to marinate for not less than half an hour, and not more than a day. Add to the beetroot red onion, sliced not very thin rings, finely chopped herbs tarragon and/or Basil, finely chopped onion-used or green onions and mix again.

Arrange salad of roasted beetroot on plates or small bowls, and if desired, drizzle with olive oil, add a little ricotta or soft cheese (especially a good combination with beet forms goat cheese) and garnish with leaves of green. published
