Quick hot dinner – a hearty, tasty and with vegetables-greens.

Sift the flour (250g) into a bowl, add the cubes of chilled butter (110 g), stir. Add 1 egg, 1 tsp salt and 3 tbsp. ice water, knead the dough. Salmon ball, wrap in plastic wrap and leave in refrigerator for half an hour.

Meanwhile, chop the tomatoes (500 g) into quarters, place in a pan with olive oil (1 tbsp), sprinkle with thyme (1 tbsp) and a pinch of sugar and saute for 2-3 minutes (as soon as you give juice, remove).

Preheat the oven to 200 degrees. Remove the dough from the fridge for it to thaw. Mix in a bowl sliced 2 red bell peppers, 2 red or white onions, thyme sprigs (without leaves), 1 tsp cumin and dried cilantro (optional). Add 4-5 tbsp olive oil and mix thoroughly. Spread the vegetables in the form and bake for 25 minutes, stirring 1-2 times in the process. Remove, sprinkle the vegetables with fresh chopped parsley and cilantro.

Roll out the dough into a square, cut into 4 squares (3-4 cm). Cover the baking tray paper for baking, put the squares of dough. With a sharp knife, make a thin border around each square. Pierce in several places with a fork. Refrigerate for 30 minutes. Remove, brush with olive oil or beaten egg. Top with a thin layer of low fat ricotta or sour cream. Evenly distribute the vegetables, leaving space for the eggs in the middle. Bake 10 minutes, remove, break each biscuit in the egg and then bake for a further 10 minutes until the eggs will not seize. Sprinkle with salt, pepper, remaining herbs, and serve.

Apple biscuit

Sift the flour (1 tbsp, you can take half wheat, half rye) in a large bowl. Stir in the sugar (1/2 tsp) and salt (1/8 tsp). Cut the butter (6 tbsp.) diced quickly, so it does not have time to melt. Throw in a bowl and grind (note the chopper in the video) until the size of peas. Add 1 tbsp of ice water until begins to form a dough (about 5-6 tablespoons of water). Give it a disk shape, wrap in clingfilm and leave in refrigerator for 30 minutes.





Roll out the dough into a circle, cover a baking sheet with parchment. Preheat oven to 200C. For the filling, mix the slices of 2 apples with melted butter (2 tbsp) and a pinch of sugar to taste.
