Snack cake with eggplant and tomatoes

  • 1 medium eggplant
  • 10 cherry tomatoes
  • 2 eggs
  • 8 tbsp olive oil
  • 2/3 Cup flour
  • 1 teaspoon baking powder
  • dried oregano
  • salt

How to prepare:

1. Cut the eggplant in slices of 0.5 cm, sprinkle with salt, leave for 20 minutes. Salt rinse eggplant then Pat dry.

4. Grease a small cake pan with oil. Mix dough with vegetables and fill the form on 2/3. (If the dough is too thick you can add 1-2 tbsp water or milk). Sprinkle with oregano and bake at 180 gr. With 30-35 minutes.
