Smiling gypsy prepares a lush meringue roll, tastes like a cake "Pavlova", only even better

Strawberry roll. on the basis of merengue in combination with a delicate cream and curd - a dessert worthy of a queen. I tried it for the first time at a friend’s house and didn’t go home without a prescription. The friend said that this is a miracle – the interpretation of the dessert “Pavlov”, and that it was named after the ballerina. In its composition, a roll with strawberries like “Pavlova”, only here an air layer is baked from merengue, and then lubricated with cream and carefully wrapped.



But in my head there was an association with “Pavlov’s dog”: at the sight of dessert, my saliva flowed like a dog with a burning light bulb! The beauty is divine, and the taste is palatable! Write down the recipe!

Strawberry Roulette Ingredients for meringue
  • 10 chicken eggs
  • 300g sugar sand
  • 1 bag of vanilla sugar
  • 2 tbsp cornstarch
  • 1 pinch of salt
  • 1 tbsp lemon juice


Cream ingredients
  • 250ml fatty cream
  • 50g powdered sugar
  • 1 bag of vanilla sugar
  • 350g cream curd


Filling and decoration
  • 100 g of strawberries (you can take frozen)
  • 20g dark chocolate

  1. Turn the oven to warm up to 140-150 degrees. Squirrels carefully separated from the yolks in a clean bowl. Make sure that the dishes are not only clean, but also dry! To the squirrels pour sugar sand, a pinch of salt and a pack of vanilla sugar.



  2. Start whipping the mixer at low speeds, gradually increasing the speed. Whip about 10 minutes before the formation of a thick persistent foam. Add the lemon juice and whip for another 2 minutes. In the whipped mass, pour starch and mix the contents with light smooth movements until a homogeneous consistency is formed.



  3. The tray is covered with high-quality parchment paper that does not need to be lubricated. Put the protein mass in a candy bag. Distribute the whipped proteins over the parchment with a confectionery bag to form a rectangular crust at least 1 cm thick.
  4. Put the batter in the heated oven and bake merengue for 35-40 minutes. The temperature inside the oven should not exceed 150 degrees. Take the finished cake out of the oven and transfer it to a piece of parchment bottom up. Carefully separate the parchment so that the mereng does not crumble, and set it to cool.

In a bowl pour cream, add powder, vanilla sugar and whip for 1 minute. Put cottage cheese to the cream and whip another minute to get a gentle homogeneous cream. Cut the strawberries into pieces, leaving 2-3 pieces for decoration.



On the cooled meringue, lay out the cream, leaving a little for decorating the roll on top, and smear over the entire surface of the crust. Make the cream thinner at the very edge. Spread evenly on the surface of the sliced strawberries. With the parchment on which the merengue lies, wrap the roll neatly out of it. Transfer the remaining cream into a pastry syringe (or bag) and squeeze it beautifully from above for dessert. Cut the strawberry with plates and decorate it with a roll, spreading it originally over the cream. Grate the chocolate on a grater or grill in a water bath, and then arbitrarily decorate the dessert with it.
