How Ukrainian refrigerator differs from okroshka and how to prepare it

On a hot summer day, there is nothing better than a plate of cold soup. Surely everyone in the cookbook has their own recipe for okroshka. It's not about her. Today we want to tell you how to make beet cold soup, or cold soup. This is a traditional Ukrainian summer soup, which is made from beets, vegetables and greens, and is seasoned with kefir or beet broth with sour cream.

Beet cold soup ingredients
  • 400g beets
  • 500g potatoes
  • 400g cucumbers
  • 200g radish
  • bulb
  • greenbow
  • dill
  • 150g sour cream
  • 4 boiled eggs
  • 2 l of water
  • salt


Preparation
  1. Clean the beets of the peel and sodium on a large grater. Put it in a pot and pour cold water. Cook it for 15-20 minutes until ready. Strain the beet broth into a separate bowl. Cool the beets.



  2. Wash the potatoes and cook them right in the skin. Cool, peel and cut in cubes.



  3. Separately boil and cool the eggs.



  4. While it's cooling, cut cucumbers, onions and radishes. Try to cut everything in the same size. The greens are fine.

  5. Now let's prepare the soup for serving. In a large container, combine beets, potatoes, cucumbers, onions, radishes and greens. Pour all this cold beet broth, fill it with sour cream, salty. Stir well and put it in the fridge for two hours. Then pour the soup on plates and decorate with half boiled eggs.





This version of the refrigerator turns out to be more refreshing and not so caloric. If you like a denser consistency, fill the soup with fatty kefir. In any case, the dish turns out to be delicious and hearty. Cold beet soup is a great dish to be satiated on hot days.

If desired, you can add mushrooms to this summer soup, both roasted and fresh mushrooms. Also for satiety, you should add bread or toast. Beets add a special taste that distinguishes it from ordinary okroshka.
