Good Ukrainian okroshka recipe Evgeny Klopotenko, hearty and cooling

The preparation of okroshka is a subject for disputes between different housewives. Everyone has their own recipe. Housewives cook it on kvass, kefir, whey and mineral water. I think there is no right or wrong recipe, just a field for experimentation. Chef Evgeny Klopotenko also decided to experiment and shared his recipe for an unusual okroshka.

The recipe will be lower, and first we will talk about small nuances that will make any okroshka even tastier. Klopotenko told as many as 7 rules of the ideal okroshka:

  1. Okroshka is a summer dish that satisfies well and quenches thirst. It can be cooked without meat or fish to make it less caloric. But then something interesting should be added to the mix of vegetables. Like a little avocado.
  2. Meat and fish are not necessarily cooked. You can bake them in the oven or even on the grill. This will make the taste even more intense.
  3. The ingredients on the okroshka need to be cut finely, but not rubbed. It is better to start with vegetables so that they release juice. The more juice, the more delicious the dish. Do not limit yourself to radish and cucumber, in okroshka and other vegetables are good.
  4. Okroshka is impossible without dill, but you can experiment with other greens. By the way, before adding to the dish, greens can be slightly salted and left to let the juice. It'll taste even better!
  5. If you insist okroshka in the refrigerator for 1-2 hours, then the taste will be much richer.
  6. If you are a connoisseur of sharpness, you can add not only mustard to the okroshka, but also horseradish or even chili pepper.
  7. In restaurants, okroshka is served in ice plates. You can try it, too. Or just add a couple of ice cubes to the plate.





Recipe okroshka from Klopotenko Ingredients
  • 4 pork ribs
  • 1 egg
  • 2-3 cucumbers
  • 250g radish
  • 1 onion stem
  • 1 celery stem
  • 8 sprigs of dill
  • salt and pepper


Refueling ingredients
  • 300g light kvass
  • 200g whey or kefir
  • 100g sour cream
  • 1 tsp mustard
  • salt


Preparation
  1. Pork ribs salty, add spices and send to the heated to 180 degrees oven. Bake for 40 minutes. Then cool, cut the meat and cut into small pieces.



  2. Hard-boiled egg. Cool and cut the cubes. Cucumbers, radishes, onions and celery wash and chop. Add celery if you like the vegetable. Taste for an amateur. If you want vegetables to juice, salt them a little. Separately cut dill.



  3. Now it's time to prepare the gas station. To do this, mix all the ingredients for filling in a separate bowl. Stir it to uniformity.



  4. In a large container, mix all the vegetables and meat, add dill, fill it with a gas station. Send it to the fridge for an hour.





As you can see, cooking okroshka is as simple as possible. But the taste of a beautiful and hearty summer okroshka will certainly please you. The beauty of this dish is in the variety of recipes. You can cook everything to your taste, but still it will be great!
