Ossetian cake with cheese Ingredients for dough
  • 2 tbsp flour
  • 250ml kefir
  • 50g butter
  • 7g dry yeast
  • 0.5 tsp salt






Filling ingredients
  • 200 g of cottage cheese (you can take suluguni)
  • 300 g of greens to taste (parsley, dill, sorrel, beet leaves)
  • 100g sour cream
  • 50g butter


Preparation
  1. First you need to prepare the dough. Dilute the yeast in 0.5 cups of kefir. Sip the flour and salt in a big bowl. Then pour the remaining kefir, yeast and softened butter. Mix soft dough, cover with a towel and leave in a warm place for 1.5-2 hours. The dough should double.


  2. While the dough is infused, start preparing the filling. Wash the greens thoroughly, dry and cut finely. Cut fresh cheese with a spoon or hands. If you prefer suluguni, rub it on a large grater. Mix greens and cheese, add sour cream to the resulting mixture and mix well. Sprinkle and pepper the filling immediately before laying on the dough.


  3. When the dough fits, sprinkle the table with flour and break the dough with your palm into a flatbread 1-1.5 cm thick. Put the stuffing in the center, straighten it.


  4. Pulling the ends of the cakes with your hands, gradually pull them into the center, connect and pinch.


  5. Hand level the surface of the cake to make a round flat cake.


  6. In the center, make a hole in the dough, so steam will come out.


  7. Bake the cake in the oven heated to 200 ° C for 15-20 minutes. When the cake is baked, grease it with butter. Done!



    Such a cake can be served warm or cold. It's amazing in any form.
