Recipe for a cake "Leningrad"

When education was free, all products were natural, and our country bore the proud name of the USSR, the hostess did that pampered their relatives with simple gastronomic joys. "Napoleon", eclairs, straws with cream, meringue and, of course, cake "Leningrad".

Anyone who grew up in the era of the USSR, surely remembers these elegant baskets of puff dough with a delicate cream inside. Our editorial office offers your favorite readers a little nostalgia and prepare legendary Soviet cake.





Air cake Ingredients for puff and custard dough
  • 1/2 tbsp water
  • 1/2 tbsp milk
  • 100g butter
  • 150g wheat flour
  • 4 chicken eggs
  • 1/4 tsp salt
  • 2 square sheets of ply dough


The ingredients for custard
  • 500 ml of milk
  • 2 chicken eggs
  • 1 tbsp brown sugar
  • 4 tbsp flour
  • 250g butter
  • 1g vanillin


Preparation
  1. Start making cakes with the creation custard. To do this, combine water and milk in a deep pan, then bring the mixture to a boil.


  2. Add butter to the milk mixture and wait until it dissolves. Then remove the pan from the fire, add the flour and thoroughly stir the future dough for a few minutes so that all the lumps of flour dissolve.


  3. It's time to put eggs in the dough. Do this carefully, alternately placing them in a container. The dough should be smooth and not spread.


  4. Roll out the sheets of pre-frozen layer dough (should get two squares of 30 x 30 centimeters). Then cut them into small squares 10 centimeters wide.


  5. Place a tablespoon of custard dough in the center of each square. Then wrap the corners of the puff dough as shown in the photo. Bake ready-made envelopes in the oven for 50-60 minutes at a temperature of 180 degrees.


  6. It's time to make custard. To do this, combine in a deep container sugar, vanillin and flour.


  7. In small portions, add milk to the container. To avoid lumps, heat the milk mixture with a microwave at the highest power (about three minutes). Stir the cream every 30 seconds.


  8. When the cream is completely cooled, add softened butter and beat the mixture well with a mixer.


  9. Fill the finished cakes with cream with a confectionery syringe or a special cornet. Before serving, sprinkle ready-made cakes with powdered sugar.
