Glafira from Ukraine worked in a kolkhoz dining room, where she came up with “Potatoes in Ulanovo”

fragrant rustic - a favorite of many. However, few people know about its origin. The fame of a truly Ukrainian treat spread around the world. “Potatoes in Ulanovo” – this is what the dish was originally called. Today we will talk about where it came from and how to prepare a hearty meal.



The recipe for the famous dish belongs to Glafira Dorosh. A resident of the village of Ulanov (Vinnytsia region, Ukraine) came up with how to unusually cook potatoes, in 1947. And it happened almost by accident.



The woman worked as a cook in the Ulanovsk kolkhoz dining room. Once she was preparing a specialty of the institution - potatoes stuffed with meat. Glafira had a few small potatoes that were not suitable for cooking. She cut them into 4 pieces and threw them into a cossack with butter: "For lunch for cooks." Nearby was a plate of garlic gravy for cakes: also leftovers. Glafira watered the finished potatoes with them. So a new dish was born, which soon appeared on the menu.

In the 60s, a journalist from Moscow came to Ulanov. He had to write an article about the Vinnytsia region in the newspaper “Izvestia”. To make everything go smoothly, the journalist tried to appease everyone at once. But the main focus was on the local cuisine. Glafira Dorosh cooked all the best dishes. And the highlight of the program was that same potato in the village with a crust.



As a result, the journalist wrote a whole article about Vinnytsia potatoes. Glafira was invited to the Moscow Chef Competition. There, among many professionals, a cook from the village prepared her simple dish of potatoes. And hit everyone! After this incident, the woman began to be invited to work in the capital’s restaurants. At home, she was given the Order of the Red Banner of Labor. Glafira refused invitations and continued to work in the local dining room.



In the village, a woman was bombarded with letters from all over the USSR. Everyone wanted to find out the recipe for a famous potato dish. But Glafira Dorosh never hid him and happily shared detailed instructions with everyone. Now it is our turn to prepare the famous dish.

Potato recipe in Ulanovo Ingredients
  • 1 kg of potatoes
  • 5-7 cloves of garlic
  • salt
  • 0.5 liters of vegetable oil


Preparation
  1. Ideally, a cast-iron pot should be used for cooking. Choose a small potato of about the same size. First, peel the vegetable and cut each potato into 4 equal parts.



  2. Secondly, pour vegetable oil into the pot and warm it up slightly. Then add the potatoes and mix them well.
  3. While the potatoes are frying, it's time to make garlic gravy. To do this, grind garlic with garlic coding. Add vegetable oil and salt to taste. Adjust the number of ingredients according to the situation. The result should be a fairly thick mass.
  4. The potatoes will be ready in 20 minutes. After removing the vegetable with noise to remove excess oil. Put the potatoes on a plate and pour garlic sauce. Then cover the dish with a lid. It is necessary that the potatoes are properly soaked in the aroma of garlic. By the way, according to the same principle, potatoes can be baked in the oven.
