Meticulous pastry figured out how to bake the cake “Apples under the snow” according to all the rules

Apple Sand Pie with a meringue in Polish or Apples in the Snow cake? Everyone calls this dessert different. There’s only one thing everyone agrees on – it’s officially the best apple dessert in the world!

Just imagine this taste: thin notes of cinnamon, tender meringue and sand dough soaked in the juice of fresh apples ... That sounds like real happiness, doesn’t it?



In search of the perfect version of this pie, we were lucky to get on the Pro Food channel, where the charming Irina shares the intricacies of cooking various interesting dishes. This is the recipe I would like to share with you today.

Sand cake with bezel ingredients
  • 110g butter
  • 4 eggs
  • 300g sugar
  • 60g sour cream
  • 1 lemon
  • 280g flour
  • 10g baking powder
  • 2g vanillin
  • pinch
  • 5 apples
  • 1 tbsp cinnamon


Preparation
  1. First of all, peel the apples from the peel, cut them in thin slices and transfer them into a deep bowl. Next, we remove the peel from the lemon with a small grater and squeeze the juice out of it (peel and juice are placed in different containers).

    Lemon juice watered apple slices, then in the same bowl send prepared cinnamon and 30 g sifted flour. And then shake the bowl well to mix the ingredients.





  2. The remaining flour is sifted into a separate bowl and stirred with baking powder and salt. After that, in a separate container, beat room temperature oil with 150 g of sugar using a mixer. At the same stage, we separate the egg yolks from the proteins and one by one introduce the first into the oil mixture, stirring everything to uniformity.

    Squirrels are left in the refrigerator, they are useful for making meringue.





  3. Now we add sour cream, lemon peel, vanillin to the bowl with an oil-egg mixture and mix everything thoroughly again. Then gradually (in 3-4 doses) add flour to the resulting mass and mix the dough.

  4. Next, line the bottom of the detachable shape with parchment, lubricate it with butter and shift the dough there. We lay the apples on top and evenly distribute them throughout the container. After that, put the cake in the oven heated to 180 degrees for 30 minutes.





  5. Meanwhile, while the cake is baked, let's do the merengue. To prepare it, just beat the egg whites with a mixer and, when they turn white, gradually introduce sugar to them, without stopping whipping. We beat the proteins until we get stable peaks. Then we take the cake out of the oven and evenly distribute our meringue on top. Then put the cake in the oven again for 20 minutes without changing the temperature.







When the cake is ready, we take it out of the oven, carefully release it from the shape and cool it. By the way, before removing the ring, you should slightly walk with a knife on the edges of the form.
