Cream ingredients
  • 150 ml of milk
  • 150g sugar
  • 250g butter
  • 1 egg
  • 2 tbsp cognac
  • 1 pinch of salt
  • 5g vanillin
  • 1 tbsp cocoa powder


Preparation
  1. Separate the proteins from the yolks. Eggs should be at room temperature, so it is better to remove them from the refrigerator 3 hours before cooking.
  2. Beat the squirrels with a pinch of salt to persistent peaks. Then add 40g of sugar and whip the proteins until the sugar dissolves.



  3. Dry the nuts in a dry pan and grind them. Instead of hazelnuts, you can take peanuts or cashews to your taste.
  4. Mix flour, 180g sugar, vanillin and nuts.



  5. Carefully mix proteins with a nut-meal mixture in 2-3 approaches.
  6. On baking paper, draw circles with a diameter of 18 cm, use the form for baking as a baking bed.



  7. Turn the paper over and lay out the dough, it is most convenient to do this with a pastry bag. You will be able to bake 2 cakes on one razor, which will save time. If there are 2 batters, you can bake 4 cakes at once. Leave between the crusts 3 cm, as when baking they will slightly increase in volume.



  8. In the oven heated to 150 degrees, send cakes and bake them for 1.5-2 hours. The cooking time depends on which cakes you like more: slightly wet or crispy.
  9. When the cakes are baked, let them cool. Then take it off the parchment. It is advisable to leave the finished cakes in a dry place for the night.



  10. To give the crusts a perfectly round shape, trim them with a ring from the cake shape. Cuts of shredded to crumb.
  11. Make the cream. Combine the egg, salt, sugar and vanillin. Mix everything homogeneously with milk in a sothein or pot.



  12. Cook the cream, stirring, 7-10 minutes. The mass will be more liquid than custard.

  14. Add cognac to the cream and beat it again to uniformity. Set aside 2 tbsp of decor cream.
  15. Put all the cream in a pastry bag and collect the cake. Smear the top and sides of the cake with cream and sprinkle the sideboards with a crumb of clippings of cakes.



  16. Decorate the top of the cake by pre-mixing 2 tbsp of cream with cocoa powder. With this mixture, make the sides around the edges with a confectionery bag. Done.
