It is important that sugar is completely dissolved in proteins. Add a nut-meal mixture to the proteins and gently mix everything with a silicone spatula so that the proteins do not fall off.





  3. The protein mixture is divided into 3 equal parts. Cover the batter with parchment paper, and then with the help of a confectionery ring and silicone shoulder blade, form a cake of protein and nut dough on the parchment. The thickness of crusts should be about 2 centimeters. Then remove the ring and proceed to form the 2nd crust. By the same principle, form 3 crusts. All these cakes must be baked (dried) simultaneously at a temperature of 100 degrees for 3-3.5 hours.





  4. With the help of the same confectionery ring and saw knife, trim the finished cakes to the size you need. Cuttings from crusts do not throw away - they will be useful at the stage of decorating the cake.

  8. Now move on to cake-making. On the basis lay out parchment paper, then the first cake. Squeeze the cream out of the confectionery bag. The cream should be a lot, as the cakes are dry and weightless. Keep doing that with all the crusts. Put cream on the top and sides of the cake.
