How to properly marinate pork ingredients
  • 1 kg cervical pork
  • 1 small head of garlic
  • 10 bay leaves
  • 1 lemon
  • 700 ml of water
  • 1.5 tsp smoked paprika
  • salt
  • chili
  • spice


Preparation
  1. First, disassemble the garlic on the cloves and crush them a little, without cleaning the husks. Also crumble the bay leaves with your hands and mix it all with salt and spices in one small plate or bowl. Next, if necessary, wash the meat and with a knife make deep punctures on its entire surface. Then rub the punctured meat with salt and spices on all sides and place in the refrigerator for 30-60 minutes.

    Then remove the meat from the refrigerator and for 5 minutes rub it with a mixture obtained from garlic, spices, salt and bay leaf.





  2. After moving the pork in a small deepened container and there send the remains of the mixture of spices. Next, wash the lemon and cut it into several parts, then send it to the same container as the meat. Then fill the pork with salt water, cover the vessel with food film and place it in the refrigerator for two days.

    After the necessary 48 hours, the meat must be removed from the marinade, cleaned of pieces of bay leaf and garlic, and then dried with kitchen paper towels.





  3. Next, you need to rub the meat with smoked paprika and make a screed for it with a twine or net. After that, put the meat on the bowl, cover with foil and bake in a preheated to 200 degrees oven for 2 hours. After an hour and a half, the meat can be checked for readiness, punctured with a knife in the middle. If the juice released from the meat is transparent, then our snack can be taken out.





  4. It remains only to give the meat the desired shape and density. To do this, wrap it first in parchment paper, and then in food film. At the end, completely cool the meat and put in the refrigerator for 3-4 hours.







Well chilled meat makes beautiful and thin slices for festive cutting.
