- Beat the proteins with a mixer until the foam is thick.
- Add to the whipped proteins a pinch of salt, sugar and yolks. Keep whipping it to uniformity.
- Pour the baking powder and add a little flour, mixing the liquid dough. I stopped adding flour, feeling the dough would be too dense when there were still 1.5 tablespoons left. This is possible because everyone’s eggs are different.
- Cut thin slices of apples and bananas into circles.
- Oil the mold.
- Put the bananas and apples down.
- Pour the dough and send to the oven, heated to 180 degrees.
- Bake for 20-25 minutes. During this time, the charlotte rises.
- Turning over the finished charlotte, I found that the bottom of the mugs of banana shine through the dough and look very unusual. There was even the idea of serving pieces of dessert with a beautiful side up.
- If you still decide to do it in a more traditional way, decorate the charlotte with powdered sugar.
- Bon appetit!
Charlotte came out fragrant and very tasty. Interestingly, in a dessert with two fillings, the dough deserves a separate mention. Thanks to him, the pastry turned out porous, lush and very soft.
