Armenian salad "Khorovats" and how it is prepared by Vasily Emelianenko

Khorovac is an Armenian dish of baked vegetables. It is perfectly combined with kebabs and adds spiciness to any dish. Translated from Armenian, “khorovats” is the same barbecue, because vegetables are baked on coals as well as meat. Today we will tell you how to prepare Armenian salad from baked vegetables at home.

It is the smell of haze that makes this salad special, so it is ideal to cook it outdoors on coals. But even if in the near future you are not going on a picnic, the smell of haze can be given in another way, which was told by chef Vasily Emelianenko. At the end of the article you will find a video in which Vasily Emelianenko talks in detail about the intricacies of cooking salad "Khorovats" at home.

The ingredients
  • 2 eggplant
  • 2 Bulgarian peppers
  • garlic
  • 1 red onion
  • 3 tomatoes
  • 1 bundle of green
  • vegetable-oil
  • smoked paprika
  • 1 hot pepper
  • salt
  • peppery

Preparation
  1. Remove the core from the pepper and cut it into large pieces.
  2. On a hot grill pan, lay the pepper down with the peel. It is the grill that replaces coals and creates the very smell of a fire, but somehow you should definitely prepare this salad in nature.

  3. Eggplant cut into large rings 3-4 cm thick and salti.
  4. Put the roasted pepper on a pan covered with parchment for baking.

  5. Cut the large tomato in two and put it on the grill. Send the eggplant there. When the vegetables appear characteristic strips from the pan, transfer them to the batter to the pepper.

  6. Put the pan in the oven heated to 200 degrees for 5 minutes.
  7. Cut the fine red onions and chili peppers.

  8. Cut the greens, do not neglect the stems, they are also small cut. This recipe uses parsley, cilantro, dill, green onions, but you can add any other greens that are.

  9. Cut the garlic finely or run through the press, and add to the greens, salt it all and stir it.

  10. Take the vegetables out of the oven and let them cool down a little so that it is convenient to work with them. Then peel off the vegetables and cut them big.
  11. Peper salad and add smoked paprika, mix everything and fill it with vegetable oil and greens.
