The way to prepare tomatoes for the winter without salt, spices, vinegar and dill

In this article, we would like to focus not on the recipe itself, of which you can find a sufficient amount for every taste. But we would like to give you some advice so that the result will turn out to be the highest quality and please you and your loved ones with an excellent taste.

To begin with, it should be noted that tomatoes are best taken elastic and fleshy. Juicy, soft, overripe, and even more spoiled fruits will not work. Their appearance will deteriorate over time, and they will not be useful for the festive table. Ideally, we recommend using the “plum” variety.

To prepare tomatoes, you need to wash under running water and wipe dry. So you can work with fruits without worrying that something unexpected will happen.



Now it is time to cut the tomatoes into halves and remove the peduncles from them. Do not cut in half, but rather a little hard. So that there is always a whole peduncle on one half. It can be removed once, which is much faster. Save time for rest or other useful activities.

Now we can turn to advice. If you are used to cooking in a different way, look at this text, sure, it will turn out, at least, no worse.

Advice 1 Be sure to sterilize banks and lids. Yes, in the end you will need to sterilize them again, already with tomatoes inside, but it is necessary. The chances of something going wrong are zero. Don't be lazy. Put tomatoes in sterile jars and pour them with boiled water.



Advice 2 The water should be boiled. It's important. Not hot, though. In fact, its temperature should not be too high, otherwise the delicate skin from tomatoes will peel off, and this will negatively affect the appearance of tomatoes. Don't add anything but water. Vinegar or salt is all gone.



The bottom of a large pan is covered with a towel and pour warm water. Hot is dangerous, banks can burst. Now put the tomato cans in the pan. Water should be on the shoulders. Place the pot on the fire and wait for the water to boil. Sterilize 17 minutes after boiling the water. Half a liter is enough for 10 minutes.

Advice 3 Do not keep tomatoes in boiling water, they become loose and soft. Now it's the old-fashioned way: tighten the lids on the banks, turn the banks over. So you'll check if the water is leaking inside the container.

Tip 4 Do not wrap cans of tomatoes in a warm blanket. After all, under it they continue to cook. Instead, leave them on the table or on the floor. Covers down. And then send it to a dark, cool place.



Tip 5 In fact, tomatoes do not require any special treatment. You can leave them on the table, there's nothing wrong with the taste. But sunlight adversely affects the color saturation of tomatoes. And in a dark place they will retain their rich red hue.



Tomatoes according to our recipe are useful for cooking salads in winter. And "brine" is perfect, for example, for borscht. The fruits themselves look like they have just come from the garden. And the dishes with them turn out fresh, juicy and fragrant.
