17 recipes for home-made adzhika for every taste
Had no idea until this summer as there are recipes adzhika! I was able to find as many as 17 ways of cooking. Offer to experiment together.
Recipe No. 1
5 kg of tomatoes, 1 kg sweet pepper, 16 pieces of bitter pepper, 300 g of garlic, 0.5 kg of horseradish, 1 stack. salt, 2 Cup. vinegar, 2 Cup. the sahara.
All grind in a meat grinder, including seeds from the peppers (cut only the tails and inside it is not cleaned), add sugar, salt, vinegar, let stand for 50 minutes, pour into bottles. Boil is not necessary. Stored well in bottles without refrigeration.

All grate or mince. Cook for 30-40 min. and close to the banks. Garlic and hot pepper, you can put more or less — to taste.
ADJIKA GEORGIAN RED
1 kg green dry hot red pepper, 50-70 g coriander seeds, 100 g Khmeli-suneli, a little ground cinnamon, 200 g walnuts, 300-400 g of salt, 300 g of garlic.
Hot red pepper soak for an hour. Add the coriander, Khmeli-suneli, cinnamon, nuts, garlic and salt. Miss 3-4 times through a meat grinder with fine screen. Store in any place, at any temperature, but preferably in a sealed container, otherwise it dries out. Mixed with salt adjika good for smearing chicken or meat before roasting in the oven.
CHICKEN WITH EGGPLANT
All the ingredients skip through Mincer, add butter and place in an enamel saucepan, boil for 40-50 minutes. The vinegar added at the end of cooking. Roll in the prepared jars.

ADJIKA “NO REST FOR THE WICKED”
2 kg of tomatoes, 20 sweet Cinna, 10-15 bitter Perchin, 400 g of garlic, 3 sticks of horseradish, 2 bunch parsley, 2 bunch of dill.
All the mince, then the resulting mixture add 4 tbsp salt, 4 tbsp of sugar and half a bottle of vinegar. Mix well, pack into jars, close with plastic caps.
ADJIKA IN ARMENIAN
5 kg ripe tomatoes, 1 kg of garlic, 500 grams of bitter pepper, salt.
All skip through Mincer, add salt, and leave in enamelware 10-15 days to adjika fermented out, not forgetting its daily mix. Salt should tomato juice before you add the garlic and pepper, then taste salt not feel.
APPLE SAUCE
Tomatoes and apples peel, pepper, slice, garlic divided into cloves, finely chopped, all mince (except garlic), pour Rast. oil and simmer on medium heat for about 2 hours. For 10-15 minutes until cooked add the garlic, give to writing a rolling boil, while hot pour into sterilized jars and sealed.
1.5 kg of tomatoes, 0.5 kg of carrots, sweet red peppers and apples, 300 g of garlic, 3-4 pod bitter pepper, 0.5 l Rast. oils.
HOME ADJIKA SAUCE
2,5 kg of tomatoes, 1 kg of carrots, 1 kg sweet pepper (red).
All skip through Mincer. Add 1 stack. Rast. oil, 1 Cup. sugar. 1/4 of a Cup. sols. The mixture was put in an enamel pan and simmer, stirring occasionally, 1 hour. Remove from heat, cool. Then add 1 Cup garlic, minced, 2 pod bitter pepper.
Cold adjika pack into sterilized jars and sealed, and plastic lids.
CHICKEN KIEV
5 kg ripe tomatoes, 1 kg pepper, 1 kg of apples (the sourer, the better), 1 kg of carrots, 2 tablespoons salt, 200 g sugar, 400 g Rast. oil, 2 tbsp red hot pepper (you can put 1 tbsp black, 1 tbsp red).
All the vegetables mince (tomato should be peeled). To make the tomatoes easy to clean from the skin, they should pour boiling water for 5-7 minutes. Fill with oil, sugar, salt, spices and boiled 2-5 hours to desired consistency. Ready adjika pour in hot sterilized jars, roll up and wrap.
