How to cook ajika with walnuts

The sauce not only gives the dish an unforgettable aroma and a pleasant aftertaste, sometimes without it the food is simply tasteless and fresh. Exquisite sauces made of expensive ingredients are suitable for a separate type of dishes, but there are also easy-to-cook sauces with pepper, able to complement and diversify the taste of familiar food.

In the classic recipe of Georgian adzhiki there are no tomatoes or Bulgarian pepper. The whole cooking technology consists in grinding and mixing the ingredients, and there is no need to cook anything.





The ingredients
  • 500g bitter pepper
  • 200g garlic
  • 250g cilantro
  • 100g walnuts
  • 30g seasoning hop-suneli
  • 3 tsp thyme
  • 170g salt


Preparation
  1. Clean the pepper from the seeds if you do not want your mouth to burn with fire from the seasoning. Grind the peppers in a blender.



  2. Peel the garlic. To quickly clean all the cloves, you can either put the entire head of garlic in the microwave for 1 minute (then the husk itself will lag), or crush the cloves with the flat side of the knife. Grind the garlic with cilantro in a blender.



  3. Peel the walnuts and grind them in puree. Then stir all the ingredients.



  4. Add seasonings and salt to the crushed ingredients and mix everything thoroughly.



  5. Put the ready seasoning on banks and let it brew for 2-3 days. You can use it after that.
