Orange
1/3 Cup ripe mango + some strawberries + 1 small cube of beetroot pulp
Red
⅓ Cup strawberries + a few raspberries + 1 small cube of beetroot pulp
Purple
1/3 Cup blueberries and / or blackberries + a few raspberries
Blue
1/2 Cup of blueberries and / or blackberries
Green
½ Small banana + 1 kiwi fruit (peeled) + small handful of spinach

Preparation:
Each color will need to mix separately. You can rinse the blender, but if you start with the lightest color, it may not be necessary.
Place milk and fruit in a blender, whisk, but don'T add Chia seeds. Sweeten to taste. Mix again until uniform in texture.
Pour the milk mixture into a container, add Chia seeds and some vanilla extract. Cover and refrigerate until the pudding thickens. If possible, stir again later to avoid lumps.
Do the same for each color, keeping them in different containers.
To assemble the parfait, put the pudding layers, alternating each color, and decorate the top with additional fresh fruit. Keep the remains of the pudding in the refrigerator for 1-2 days. Enjoy!
