For chia pudding
For grapefruit topping
1. For chia seed pudding: In a large bowl or jar, whip or shake coconut and alternative milk, chia seeds, ginger, vanilla and maple syrup.
2. Cover and cool for 2 hours (to thicken), shake from time to time. If the pudding turns out to be liquid, add another tablespoon of chia seeds at a time. After half an hour, if necessary, add another spoon until the mixture reaches the desired consistency for pudding.
3. Spread the pudding in a container, decorate with grapefruit slices and toasted coconut flakes. Enjoy it!
