Bright terrin from beets and cashews - tasty and useful!

Bright and tasty dish of beets and cashew nuts will be a real decoration of the table. It is not only nutritious and useful, but also for cooking you will need very little time. This dish can be served with whole grain breads as an original snack.



Ingredient:

  • 450g beets
  • 185g fried cashew nuts
  • 120g finely grated parmesan
  • 1 clove of garlic, crushed
  • 1/4 cup of freshly squeezed lemon juice
  • 1/2 cup olive oil
  • 1 pinch of sea salt
  • 1 pinch of freshly ground black pepper
Preparation:

Wash the beets and trim the leaves, leaving a few centimeters of stems. Put in a pan, pour water and bring to a boil. Cook on a slow heat for about 30 minutes (until the toothpick will easily enter the beets).

Remove the pan from the fire, put it in the sink and pour cold water. Allow water to overflow over the edges until the beets cool. After that, clean the beets (the skin should easily get off when pressed with your fingers).

Cut the peeled beets into pieces and place in the harvester. Beat, you should get a puree, then measure 185 grams.

Place 185g of mashed potatoes back, add cashews and parmesan, beat again to a uniform state.

Add olive oil, lemon juice, salt and pepper. Mix, and then try, if necessary add the seasoning to taste.

The dish can be stored for up to seven days in a sealed container in the refrigerator.



Note:

If you have plenty of beets, make more puree and freeze it (dividing it into 185g servings). Therefore, you will need only 2 minutes to prepare a dish in the future.
