Bright green pea muffins

These cupcakes are a great way to teach a child to eat such a useful product as green peas. They contain protein, nutritious and useful. It will take quite a bit of time to prepare.

Green pea muffins

Ingredients (for 12 cupcakes):

  • 1 cup (140g) of frozen peas
  • 4 eggs
  • 1⁄4 cup (20 g) of grated hard cheese (such as cheddar or parmesan)
  • 2 tablespoons of almond flour
  • 2 teaspoons of olive oil
  • A few parsley twigs, only leaves (or herbs to your liking)
  • 1 tablespoon of coarse flour with added baking powder


Preparation:



Warm the oven to 180C (160C on convection mode)

Prepare a form for baking creams (12 x 50 ml), you can cover with parchment paper or lubricate with oil.

Freeze the peas, put them in a blender. Add there 1 egg, cheese, almond flour, olive oil and parsley. Blow to a homogeneous mass. Put it aside.

In the bowl beat the remaining 3 eggs. Connect with the pea mix, stir. Gradually add the flour.

The dough must be uniform.

Pour the mixture into the prepared form. Bake for about 12 minutes (until ready).

Leave the cupcakes to cool in shape for 5 minutes, then move to the grille. Serve at the table warm or cold.
