Unleavened bread with wild garlic

Ingredients

  • 200g whole wheat flour
  • 275g white flour
  • 350ml buttermilk
  • 1 teaspoon baking soda
  • 1 large chicken egg
  • 1 teaspoon of honey
  • 1 handful wild garlic leaves, coarsely chopped
  • A pinch of salt

Preparation:

Preheat the oven to 190 ° C. Grease a baking pan.

Mix flour, soda, wild garlic and salt in a bowl.

In a measuring Cup measure out buttermilk, then whisk with egg and honey.

Make a well in center of dry ingredients, the deepening, and then pour in the whisked buttermilk.

Add a little more flour if the dough is too sticky.

Using a wooden spoon, stir everything until smooth. Shape the dough into a ball and place in a baking pan.

Sprinkle flour on top and bake in the oven for 35 minutes. Then you can flip the bread on the grill —that means it is ready. Another trick: if you knock on the bottom of the loaf, the sound should be deaf.

Let cool before you slice. Enjoy with butter, jam or just plain!
