Why is truffle so expensive?

The truffle — the Royal mushroom. Truffle is the most expensive mushroom of all that is acceptable for human consumption. Kilograms of selected truffles can cost more than 4 thousand dollars is even more expensive than gold. These mushrooms are incredibly rare. But the main difference is that the truffles are delicious. Truffles are harvested in the South of France and Northern Italy, they are recognized as one of the best in the world — the French black, or Perigord, they still are called "black diamonds".

 




The French and the Italians fight for the honor of being the "truffle capital of the world". In some places, the truffles can be harvested almost 4 seasons in a year: fall — white, winter — black Preciado (late autumn and winter in southern Europe, generally considered to be truffle season), spring — March bianchetto, summer and autumn — summer black. The most delicious, fragrant, delicate truffles white. They are impossible to breed, unlike other types. Because they grow only in limited space (truffles in Piedmont harvested in the Langhe, limited areas of Monferrato and Roero and the hills around Turin), the cost — consequence of the huge demand and small number of goods.





What is so magical in these truffles? Fans of white truffle report that they "eat the smell" — as the aroma and flavor of white truffles so interconnected that it is virtually impossible to separate one from the other. That attracted no less flavor — seasonality. The use of these mushrooms will be able from October through January. That's why these mushrooms are the most expensive delicacy in the world.

One of the most expensive truffle sold at auction (Italy) – it weighed 1.2 kg – for 95 thousand Euro.
