Dough:
250 g flour
100 g icing sugar
a pinch of salt
30 g almond powder
125 g butter
1 egg

Pistachio-almond cream:
50 g butter
50 g icing sugar
1 egg
50 g almonds
30 g pistachios
0,5 tbsp corn starch

2 grapefruit
500 g of canned pears

Glaze:
apricot jam
water

pistachios (or any other nuts) for decoration



How to cook:

1. For the dough on the working surface sift the flour and powdered sugar. Make a well, add a pinch of salt and almond powder (if you don't, it's no problem: put 30 g of almonds in a coffee grinder and grind). In the center put a piece of very cold butter and vigorously RUB it into the flour.

2. To enter the egg and knead elastic dough. Then shape into a ball and put it in the fridge for 20-30 minutes.

3. For the pistachio-almond cream softened butter vzbit with sugar powder. Add the egg.

4. Grind into powder almonds and pistachios, combine with corn starch and add to whipped with powdered butter.

5. Pagpalit work surface with flour, place the chilled pastry and roll it thin layer.

6. Put the dough in a form with removable bottom lined with parchment. Make a border. Pierce the dough with a fork so that it does not swell. Put the cream and smooth the surface with a spatula.

8. Bake in a preheated 200°C oven for 40-45 minutes.

9. For the glaze in a saucepan combine apricot jam and water, bring to boil, and boiling jam to lubricate the surface of the pie. Edge sprinkle chopped pistachios.
