Vegan pilaf with prunes

Ingredients for 8 servings

How to prepare peel and wash the vegetables. Slice 2 medium onions diced, 3 carrots cut into strips, 2 bell peppers cleaned from seeds and cut into cubes.

Heat 3 tablespoons of vegetable oil in a large, deep frying pan. On low heat saute the onion, carrot and bell pepper for 15-20 minutes, stirring from time to time.

Meanwhile, finely chop 3 cloves of garlic, chop 1 Cup of prunes into thin slices, slice 3 medium tomatoes diced.

Add the garlic, prunes, tomatoes. Add 500 gr. rice, salt, pepper, add the Bay leaf. Mix well.

Pour 4 cups (800 ml) of hot water, cover and simmer for 15-18 minutes until the rice is tender, yet the pan will not remain liquid. Stir and let stand for 15-20 minutes under the lid.
