The Perfect Pizza Dough and Sauce by Jamie Oliver

Outside the window is autumn, which means it's time to harvest tomatoes. What can you make of them? Of course, delicious pizza. Margarita, marinara or four cheeses - choose any. You can even invent your own stuffing. But the dough should always be the same: thin, crispy and tender. And the sauce is juicy, saturated and at the same time moderately neutral, so as not to clog the main taste.

During his many culinary travels in Italy, Jamie Oliver found the perfect, if you will, canonical recipe for dough and sauce. If you follow the rules, you will get a great pizza.

So, what you need for the test: 200 g of manca (the secret of the perfect test is in it)
800 g of hard wheat flour (if this is a problem, safely replace with ordinary flour of the highest grade)
550 ml of warm water
1 tbsp salt
4 tbsp olive oil
14g dry yeast

How to cook:

1. Sprinkle both types of flour on the surface, make a depression in the center and pour warm water.

2. Slowly but surely with a fork mix flour and water.

Do not rush to use your hands, the dough should prepare for this, says Jamie.

3. Add salt, olive oil and dry yeast. Stir with a fork, collecting flour from the edges.

4. As soon as you feel that the fork has become difficult to work with, sprinkle your hands with flour and start stirring the dough. The main task in this process is to achieve maximum elasticity of the test.

It's not easy, but the result is worth it.

5. Form a ball out of the dough.

Put it in a bowl previously sprinkled with flour.

6. Yeast loves heat and moisture, so cover the bowl with a wet cloth and place in a warm place for 45-60 minutes, the dough should triple.

7. The perfect dough is ready, it remains to roll it as thinly as possible.

Now let's get to the sauce.

The recipe is as simple as all genius.

Gotta:
basil
4 cloves of garlic
8 tbsp olive oil
3 cans of canned tomatoes in their own juice
salt, pepper to taste

How to cook:

1. Grind the garlic.

2. On olive oil, roast garlic and basil, add canned tomatoes and stretch them with a spoon. Sprinkle and pepper, how to mix everything. Cook for a few minutes.

3. Remove from the fire and pass the mass through the sieve.

4. Return to the fire and cook on a slow heat for another 5 minutes.

Sauce ready!
