Early ripeness:

The maturity of these varieties: 50-80 days. Therefore, you need to remove such beets in July-early August. I know that there are also ultra-ripe varieties, but they are not very tasty. So if you want real borscht, be patient.



Medium ripe:

Crimson ball, Bordeaux, Cold-resistant, Bikores, Bolivar, Bravo, Globe, Two-seeded TSHA, Detroit Nero, Ideal, Cornell, Red cylindrical, Larca, Libero, Mona, Mulatka, Incomparable A 463, Opolski, Pablo, Pronto, Red Cloud, Redondo, Russian single-seed, Smuglianka, Sonatai Havskaya.

Perhaps the most popular group of varieties. Maturation period: 80-100 days. Remove such beets should be in the middle - late August. If planted at the end of May, you can hold until September. Well kept all winter.



Lately ripe:

Torpedo, Cylinder, One-sized and others. Maturation period: 100-135 days. Such varieties, as a rule, are stored for a very long time - right until spring. My sister had a lot of these beets last year, and she didn't really eat them. In the spring, they went to the cellar, and the roots seemed to be only from the garden.

Why is it not advisable to remove beets before the deadline? First, closer to autumn, when the temperature gradually decreases, the beets grow well.

And secondly, the most useful substances in it accumulates already in the last stage of growth.

However, delaying cleaning until freezing is also wrong. Protruding "popki" can catch frost, and root vegetables quickly deteriorate during storage.



Focus on weather conditions

Autumn is too warm. In this case, it is better not to keep beets for a long time on the bed - it can become fibrous and even slightly woody.

Rainy autumn. Also, do not delay cleaning for a long time. Excess moisture in the soil will adversely affect the taste of the crop. And stored too juicy beets for a short time. By the way, if you hold it on the bed in rainy weather, root vegetables can rot and crack.

Dry autumn. Very favorable weather. If autumn is dry and moderately warm, it is much better to keep beets in the ground than in the cellar. It will accumulate a lot of vitamins and will be well stored.



External signs of beet maturity

The size of the root crops has reached the value indicated on the bag with seeds. Fortunately, beets almost always “looks” above the surface of the earth, and it is easy to determine the size.

The lower leaves have turned yellow or dried.

Beets are usually pulled out of the ground with pitchforks. So that the root crop does not damage, and the ground is well warmed.

By the way, there is one important point: you need to cut the foam carefully, leaving the petals no more than 1 cm. If more, beets will begin to grow closer to winter, which is unacceptable.
