Spicy vegetarian stew with pumpkin and lentils

Vegetarian stew of lentils, pumpkins, onions and carrots, the perfect solution if you are looking for delicious hot soup recipe without meat.
Ingredients
- 1 large onion, peeled and finely chopped
- Garlic 2 cloves, peeled and finely chopped
- Olive oil 2 tbsp
- Lentils 250 g, green
- Vegetable broth 1 l
- 2 Bay leaf
- Pumpkin 600 g
- Морковь300 g, peeled and chopped
- Orange 2 PCs
- shallots 3 pieces, trimmed, washed and cut into thin rings
- Salt
- Cayenne pepper

Heat the oil in a frying pan and quickly saute the onions and garlic.
Then add the lentils, vegetable broth and Bay leaf and bring to a boil and simmer covered for about 25 minutes.
Meanwhile, wash the pumpkin, cut open, remove seeds and chop the pulp into pieces of 2-3 cm
Peel the oranges with a sharp knife, remove core and membrane, and cut into pieces .
Work over a bowl to collect the juice.
Add the diced pumpkin and carrot slices to the beans for 5-8 minutes until tender. Continue cooking with the lid open.
Now add the orange segments and juice, and season to taste with salt and Cayenne pepper.
Serve with a garnish of onions.
