Indian ice cream - Kulfi

Before the invention of refrigerators this Indian cold dessert prepared only professional manufacturer of ice cream — cultually and only for royalty.


For its preparation You will need:

  • 4 cups milk;
  • 3/4 Cup heavy cream;
  • 3/4 Cup sugar;
  • 2 tsp of starch from maize;
  • 1/2 tsp. agar-agar;
  • 1/4 tsp crushed cardamom
The recipe Into a thick-bottomed saucepan, combine the milk, sugar and cream and let it evaporate on the fire, stirring constantly. It will take about half an hour.

In a separate bowl, mix corn starch, agar-agar, and cardamom with 2 tablespoons of water. Carefully stir until then, until all of the lumps.

In boiling milk add the mixture and cook for 3 minutes. Turn off the heat and stir for another minute.

Pour into molds and put in refrigerator to cool for 5 hours. Published
