Sand dough: a proven recipe from Jamie Oliver

This sand dough was made by Jamie Oliver's great-grandmother. The famous grandson decided to share a canonical family recipe. Now sweet pies with berries, cakes and cookies will always be obtained.

What do you need?
500g flour
250g butter
100g powdered sugar
lemon peel - if desired
2 eggs
milk
flour - for the working surface







How to prepare sand dough:

1. Sip the flour into a deep bowl and add butter.

Jamie’s great-grandmother has always followed the golden rule: fat and flour are used in sand dough in a 1:2 ratio. If we take 250 g of butter, then flour should be 2 times more.




2. Sowing powdered sugar in a bowl of flour and butter.



3. Hands very quickly grind flour, oil and powder, so that the mass turns into homogeneous golden lumps.

If your hands are too hot, the right sand dough will not work, so take a bucket of ice and before you start working for a few seconds, put your hands in the ice.



4. Make a small depression in the mass, break 2 eggs into the resulting hole and gently mix the yolk and protein with the help of your fingers.

Add lemon peel, pour some milk. Actively knead the dough, it should become thick and sticky.

Do not overdo it, otherwise the dough will be heavy and not baked. We need a crumbly and crispy piece of culinary art!

5. Sprinkle the working surface with flour and lay out the dough. Carefully press and squeeze several times, in no case stirring too actively. Sand dough does not tolerate torture!



6. Form a ball, wrap with food film and remove for 30 minutes in the refrigerator.



7. How to properly roll out the sand dough? Advice from Jamie: put the dough on a sheet of parchment, cover with a second sheet of parchment.

Roll the roller directly on top of the paper, in this case, the dough will be smooth and retain the necessary texture. If it broke, it's okay.

Pull out the edge of the dough and lay it over, cover it with paper and roll it gently again.

8. Was the test too much? Wrap it with food film and put it in the freezer.

Within 2 months, the sand dough will be in excellent condition. published
