  • salt and sugar to taste.
Preparation:

Add in a saucepan the egg yolks, put back the salt and sugar and a good grind. Then add the milk and stir. Pour the flour, add the butter and quickly whip the batter.

7. Choux pastry

Ingredients:

  • 150 g of flour;
  • 4 eggs;
  • 100 g of butter;
  • 1 tsp sugar;
  • 240 ml of water;
  • a pinch of salt.
Preparation:

Pour water into a saucepan, add the butter and a pinch of salt. Once the butter has melted, add the flour, without ceasing to stir the dough. Make it, take off from heat and cool to room temperature.
