While one part of the planet gets to eat white rice two or three times a day, another third came to the understanding that white rice is almost empty calories.

Anyway, there are various "alternatives" in the form of more expensive varieties, brown rice, wild rice... but today will tell about the most unusual type of rice, the fastest and most useful idea, in fact, basic, but very sensible – if we are looking for how to vary your menu and eat more vegetables and less carbohydrates, if looking for optimum ingredient filler to add volume to a salad or "pate"... in all these cases, try to look at the "cabbage rice" from cauliflower.

Preparing it is very simple:

separate the florets from the stem and chop in a food processor until the largest "grains", then you can freeze vakuumnykh or plain bags in batches, for 2-3 measuring cups – or just send in, in the form of cheese and warmed up:

it is possible to dry "rice" in the oven for about 15 minutes at the temperature of 200C (a thin layer on a brass tray, sprinkled with salt)

or pan (on a dry, olive or coconut oil) with salt and spices: pepper, garlic, soy sauce... coconut sauce, parsley or mint, turmeric or curry – a matter of taste.



Two examples:
1) raw rice in almond garlic sauce:
"rice" is not heated, but for the sauce, the almond paste, mix in a blender with hot water (1:1 or 1:2), sea salt and garlic, season with "rice", if desired, add thin strips Bulgarian pepper, olives, parsley and mint, or arugula.

You can go ahead and use same filling for stuffing bell peppers or wrap it in nori sheets by the classical technology of preparation of rolls

2) the hot coconut-ginger rice:
the required amount of "rice" -a capacity of about 0.5 l,
peeled grated a piece of ginger with the thickness of 2-2,5 cm,
½ Tsp sea salt
4 tbsp coconut

Rice mixed with grated ginger and salt and spread a thin layer on two brass trays, bake at 200C for 10-15 minutes, at least once well tossing. Remove from oven and mix with coconut flakes, to decorate the arrows shallots
 



The third example is not really considered, because the ingredient is the same, but the result is even more unexpected:

You will need about 1 kg cauliflower (chopped to "rice"), one-third Cup soft goat cheese, 1 egg and 1 tsp. of dried oregano.
"Rice" is boiled in boiling water 4-5 minutes, throws in a colander, squeeze through cheesecloth or using a clean kitchen towel.
In a large bowl, mix dry rice with egg and soft cheese, oregano and a pinch of salt, as it should knead it with your hands, form the crust on parchment for baking, slightly less than a centimeter thick and slightly thicker towards the edges to make a "crust".

Bake 30-40 minutes in the oven, preheated to 200C, until the cake will not harden and will not become a Golden color.



Such cakes can be lubricated with tomato sauce or hummus, put the vegetables and olives and a little mozzarella and bake another 5 minutes, or freeze, shaking his up in plastic together with filling.published
