  • 1kg cauliflower
  • 4 cloves of garlic
  • 4 tbsp dry sherry
  • 1 tsp paprika
  • 400 ml of canned cream tomatoes
  • 40g almond crumb
  • half-bundle
  • thyme-bundle
  • peel and juice of one lemon
  • olive-oil
  • sea-salt
  • ground black pepper


Preparation
  1. Peel the garlic, then grind it in a mortar along with red pepper and half the thyme leaves. Add 2 tablespoons of olive oil and season to taste.
  2. Remove the peel from the lemon and fold it into a separate bowl.
  3. Cut the outer leaves of the cauliflower. Cut the cap so that the cabbage can stand exactly on the surface.
  4. Rub the cabbage with a garlic mixture and then place in a baking mould. Pour sherry and lemon juice.
  5. Bake in a hot oven for about 1 hour and 20 minutes until the cabbage is soft.
  6. Take the mold out of the oven, add the sliced tomatoes. Sprinkle the cabbage with lemon peel and the remaining thyme leaves.
  7. Return the shape to the oven for another 10 minutes, so the cabbage turns brown.
  8. Roast the almonds in a dry pan for 2-3 minutes.
  9. Sprinkle the cabbage with nuts and roughly sliced parsley. Spray olive oil and cut into portion pieces.

Cauliflower with zire, coriander and almond

The ingredients
  • 1 head of cauliflower, divided into inflorescences

  • 1-2 dried chili peppers
  • 1 handful of dried and crushed almonds
  • 2 tsp cue seeds

Preparation

Cauliflower with anchovies and saffron under wine sauce

  • 1 large cauliflower header
  • 3 small bulbs
  • 6 anchovy fillets in butter
  • 6 cloves of garlic
  • 6 large green olives (with a bone)
  • 500ml of white wine
  • 1 pinch of saffron (optional)
  • olive-oil


Preparation
  1. Cut the onions into quarters, divide them into layers and lay them in a deep pan or pottery.
  2. Add a tablespoon of olive oil, anchovies and roast, stirring periodically.
  3. Peel and grind the garlic, extract the seeds from the olives, add all this to the onions and anchovies.
  4. Cook for another 2-3 minutes, then pour the wine and add saffron or other spices. Sauce is ready.
  5. Cooking cauliflower in the oven Start by training the kochan. Cut the outer leaves. Cut the cap so that the cabbage can stand exactly on the surface, then, using a sharp knife, make a deep cruciate incision in the cap.
