Meatless tomato soup with turmeric

Ingredients:
  • 450 g canned chopped tomatoes
  • 150 g cherry tomatoes
  • 1/2 Cup vegetable broth or water
  • 1 small onion
  • 2 cloves of garlic
  • 4 sprigs of parsley
  • 2 tsp ground turmeric
  • 1 tsp dried Basil
  • 1 tbsp Apple cider vinegar
  • 1 tsp olive oil
  • 1 tbsp pumpkin seeds
  • a handful of mix nuts (almonds, cashews, hazelnuts)
  • salt, freshly ground black pepper




Preparation: 1. Peel the onion and garlic finely chop. The cherry tomatoes cut in half. In a saucepan heat olive oil and saute the onion and garlic for 1 min. Add the turmeric and tomatoes and cook, stirring, until, until the tomatoes are soft, 5-7 minutes 2. In a pan add canned tomatoes and dried Basil, pour in the vegetable broth and the vinegar, bring to a boil. Cover pot, reduce heat and simmer soup on low heat 5 min. 3. On a dry pan fry the nuts and pumpkin seeds. Nuts, large chop or slightly crush in a mortar. 4. Finished soup, chop in a blender into a smooth puree. Season with salt and black pepper. Ladle into soup bowls, garnish with nuts and pumpkin seeds and sprinkle with chopped parsley.published
