Salad of raw cauliflower — quick, tasty and healthy!

If cauliflower grind in a blender, it turns into "rice" which I love advocates healthy eating and the paleo diet: no gluten, no fast carbs.


  • 1 small head of cauliflower, weighing 700-800 g
  • 50 g of roasted almonds
  • 20 g of sunflower seeds
  • 2 tbsp black sesame
  • 5 sprigs of mint or cilantro
  • lemon juice
For the filling:
  • ¼ Clove of garlic
  • a pinch of sugar
  • 1 tsp grated ginger
  • 1-2 tbsp of rice vinegar
  • 1-2 tbsp fragrant sesame oil
  • 1 tbsp lemon juice
  • pinch hot red pepper flakes
  • salt and ground black pepper to taste
 Step-by-STEP RECIPEStep 1 Prepare the filling. Garlic RUB on a small grater, mix with lemon juice and leave for 5-7 minutes. Add salt, sugar, ginger, rice vinegar and sesame oil. Stir in the hot pepper flakes and black pepper.

Step 2 Disassemble the cauliflower into florets and slice them. Add the florets to the bowl of a food processor and chop pulsed into a fine crumb resembling rice or couscous.

Step 3 Put the rice on a dish, sprinkle with lemon juice, pour most of the dressing. Sprinkle chopped almonds, sunflower seeds and sesame seeds, mint leaves or cilantro. Pour the remaining dressing and leave for 10-15 minutes to infuse. published
