Mom's recipe for hard cheese without milk, Lilia Zvit shared a secret

Cheese is a memory of a serene childhood. Every time I visited my grandmother, she would give me a big slice of cheese for lunch. The most delicious cheese I thought at the time was Duplet, a hard cheese half orange, half yellow. Over the years I have tried a dozen varieties of cheese, but this is not the limit. Today I want to tell you how to make hard cheese at home from cottage cheese.



I want to remind you that hard cheese and cheese product are completely different things. Ideally, the natural cheese we buy in the store should consist of milk, sourdough and rennet enzyme. Other additives, preservatives, plant components make cheese a “cheese product”. It's a little cheaper, but there's no use in this cheese.

My grandmother kept a cow in the village for several years. It was a wonderful time: we ate fresh cottage cheese and honey for breakfast, and in the evening we cooked ourselves cocoa with milk. My grandmother made butter, sour cream and made cinnamon buns for me and my sister. Since cottage cheese and milk were abundant, my grandmother often gave us dairy products. My mom used to make boiled cheese, and today I make hard cheese.



The ingredients
  • 1kg cottage cheese
  • 1 egg
  • 6g salt
  • 6g soda
  • 1 tbsp vegetable oil


Preparation
  1. Put the cottage cheese in a glass bowl or one that is suitable for microwave. The cottage cheese should be heated in a microwave at a high temperature for 3 minutes, or cook cheese in a water bath. Every 3 minutes (2-3 times) remove the cheese from the water bath and stir it with a silicone spatula.



  2. Put a sieve of gauze and let the resulting serum drain. Then return the cheese to a deep bowl.



  3. Add salt, soda and egg. Beat the cottage cheese with a blender to homogeneity and add vegetable oil. Blow the mass again with a blender.



  4. Next, put a bowl of cheese mass on a water bath and stir the mass. When it becomes plastic and joins in one lump, put the cheese in a food container with a lid, preferably glass, and let the cheese cool.
  5. Store cheese in the fridge in parchment or in a container. Bon appetit.
