I make strawberry cheesecake in the American manner, I do not have to bake anything.

Cheesecake with strawberries without pastries is a great summer dessert. First, for its preparation, you do not need to stand at a hot plate. And secondly, strawberries make it light, elegant and fragrant. We add that the classic recipe uses cream cheese, and we replaced it with ordinary cottage cheese.



Cheesecake with strawberries without baking Ingredients for the base
  • 300g sand cookie
  • 60g butter
  • 20g milk
  • baking-form


Ingredients for filling and jelly
  • 500g cottage cheese
  • 200 g cream with a fat content of 33%
  • 150g sugar
  • 400g fresh strawberries
  • 18g gelatin
  • 100g of water
  • 250g strawberries
  • 10g gelatin


Preparation
  1. Grind in a blender sand cookies to a homogeneous mass. If there is no blender, you can just roll the cookies with a roller.


  2. Microwave the butter.
  3. Add warm butter and milk to the cookie crumb. Stir the resulting mass.
  4. Evenly distribute the dough from the cookies on the bottom of the form. Carefully tamper. For this, you can use, for example, a cup with a flat bottom. Send the form to the fridge while you prepare the filling.


  5. Pour gelatin for filling with water and stir well. If your gelatin requires soaking, then immediately soak a portion (10 grams) for jelly.
  6. Separate 200 grams of the most beautiful strawberries for decoration. Wash the rest well, remove the peduncles and cut into small pieces.

  7. Heat the gelatin for filling until it is completely dissolved.
  8. Cut the cream with sugar until stable peaks form. It is desirable that the cream be chilled. Then it will be easier to beat them. And even better, if it is cooled and the corolla, and the container for whipping.
  9. Break the cottage cheese at room temperature with a spatula. Carefully combine cottage cheese and whipped cream. Stir it to uniformity. Pour into the resulting mass of warm gelatin. Stir again.
  10. Add the sliced strawberries and stir again. Do not use a mixer to avoid damaging the berries.
Put the filling in a form with a base of cookies. Knock the shape on the table so that the curd mass is better distributed throughout the volume. If the surface remains uneven, spread it with a spatula. Put the form in the freezer for 10 minutes. The filling should become so dense that it can be safely laid out strawberries for decoration. Pour strawberry juice with gelatin for jelly. Heat until completely dissolved and leave to cool. Cut the strawberries into thin slices. Beautifully spread sliced strawberries over the surface of chilled cheesecake.


Tablespoon carefully pour between the berries a thin layer of cooled jelly. To prevent the berries from floating to the surface when you pour the rest of the jelly, put the cheesecake in the freezer for a few minutes.


When the first part of the jelly is grasped, pour the remaining one on top. Leave cheesecake in the fridge for 3-4 hours. After a specified time, take the dessert out of the form and transfer it to the dish. Ready cheesecake is light, tender and pleases the aroma of fresh strawberries.
